Navigating challenges as a supervisor in collegiate dining service

I've been a supervisor at a collegiate dining service since July 1st after returning to my old job under a new contract provider. I had left last year for what I thought was a better opportunity, but that ended with me getting fired, which sent me into a tailspin. I sought therapy and medication to help me cope, and I've been committed to my weekly sessions since early June. This journey has helped me develop a more balanced perspective on work and relationships. However, my current job is turning out to be a total mess. The new manager is a poor communicator, often leaving staffing decisions until the last minute. For example, I found out about student workers coming in only when I saw them on the day of their shift. Yesterday, I panicked when I realized I was scheduled to close with only two other people. The shifts are getting longer, and we're only allowed a short break, which is becoming increasingly difficult to manage given the lack of staff. I'm seriously considering leaving this job, but I don't want to make a hasty decision based on my past reactions. I do have a backup plan in place for substitute teaching across several districts, which could provide a more stable schedule with weekends off. I’m looking for advice on whether I should stick it out or make the switch, and I hope to hear some kind and constructive feedback.
