Navigating Job Loss as a Production Engineer at a Door Company

I recently found out that my position as a Production Engineer at a door company has been eliminated. This news hit me hard, especially since it was one of the few entry-level engineering jobs available in my area. During the meeting, my manager offered me two manual labor roles instead, saying they value me and want to keep me in the company. While I appreciate the offer, I'm feeling anxious about the situation, especially since several colleagues have left for competitors. I'm torn between wanting to stay in the engineering field and the need to secure a paycheck. Is it common for companies to shuffle employees into different roles like this? I want to know if I can negotiate terms for these new roles or request ADA accommodations due to my anxiety. I'm looking for any advice on how to navigate this challenging situation.
