Navigating a stressful new job: questioning my boss's expectations and workplace culture

I recently left my job at a nonprofit to join a new business focused on retail, production, and event coordination with artists. Initially, I felt a strong connection with my new boss, who praised me as a "dream team" member and even mentioned that I was overqualified for the role. I started off helping her move to a new location, but after just two weeks of actually working in my role, things took a turn. My boss has been increasingly critical, constantly questioning why I forget things she's mentioned, and she seems overly vigilant about any mistakes I make. Her expectations are quite high; she wants me to be early for every shift and has even marked my clock-in time in red if I'm just a minute late. Additionally, she pressures me to come in on my days off for events, despite me expressing that I need a predictable schedule. Recently, she called me for a 30-minute unpaid conversation because I declined to cover an event, saying she had "bent over backward" for me by covering my vacation and doctor's appointments. She seems to expect me to prioritize the business above all else and has suggested I start documenting everything she says. Now, after only three weeks, I have an evaluation looming. I’m starting to feel overwhelmed and stressed out. I’m questioning whether this behavior is toxic or if it’s just part of the job culture here in this small town where she is well-liked. I’m feeling lost and unsure about what to do next.
