Navigating job offers: weighing a $15 job against new $20-$25 opportunities

I recently accepted a job that pays $15 an hour, which wasn't my first choice, but I felt I needed to secure something after a year without interviews. About two and a half weeks ago, I applied to six jobs that offered between $20 and $25 an hour. At the time, I didn't hear back from any of them, so I settled for the $15 job. Now that I'm employed, I've started receiving interview requests from three of the companies I applied to earlier. While I like my current job, I'm considering whether I should go to these interviews for the higher-paying positions. I know there's a significant difference in pay, and some advice I've received suggests that I could leave the $15 job off my resume if I decide to take a new offer. It's a tough decision because I enjoy my current role, but the potential for a better salary is tempting.
