Feeling discouraged in my job search despite years of experience and education

I'm currently feeling really discouraged in my job search. I'm a 31-year-old undergrad student in Canada, and after years of personal issues that interrupted my education, I'm finally back to studying full-time and about to graduate. I've been working consistently since I was 21, and I thought my current job in program management would lead to something more stable, but it hasn't. I've been applying for other jobs since last year, but my inbox is just filled with rejection emails. I primarily have experience in program management, charity/nonprofit work, and higher education, yet I can't even secure a student job on campus. Yesterday, I had a bit of a breakdown because everything seems to be piling up. I'm finishing a degree that I genuinely love, but I know it's not in high demand. Although I'm looking forward to more schooling, I can't seem to land any job offers despite having seven years of experience in various roles, including operations and marketing. I also actively volunteer in my community, which I thought would help my prospects. People often tell me my resume looks great and that I have potential, but that hasn't translated into any job opportunities. Earlier this year, I made it to the final round of interviews for a campus job that seemed perfect for me, but I was ultimately passed over, and that really hurt. I've enrolled in a career mentorship program, which has been somewhat helpful, but I still feel stuck in my current situation. I'm feeling exhausted and lost. My family doesn't have any leads for me, as most of them work labor jobs, and my friends are busy with their own lives. Right now, I'm really at rock bottom.
