Navigating job offers: weighing a secure role against a potential career boost

I'm currently navigating two potential job opportunities and feeling a bit overwhelmed. The first opportunity is with a large company where I'm still in the interview process. I've been waiting for the second round interview, which I hope to schedule by tomorrow or early next week. I only received the request for the second interview today after following up multiple times this week, which has made me feel a bit uncertain about my standing in the process. The second opportunity is much more straightforward; I'm at the offer letter stage with a smaller company. They have offered me a decent salary and benefits, but they need my response by Monday and expect me to start the following Wednesday. I did ask for an extension, which they granted, but it still adds pressure. While the first opportunity has the potential to significantly boost my career according to my mentors, the slow pace and lack of communication make me feel like I might not be their top choice. I'm torn between the security of the offer I have and the potential of the other role. Any advice on how to handle this situation would be greatly appreciated!
