Navigating my engineering apprenticeship while exploring new job opportunities

I'm currently in my first year of an engineering apprenticeship, earning $25,000 a year. I have a third-class bachelor's degree in a subject that I consider less valuable, and I didn't include my grade when applying for jobs, which helped me secure this position. After graduating just after the pandemic, I spent two years driving vans and working in a warehouse, followed by two years of unemployment. Although my apprenticeship is fine, the pay is too low for me to afford moving out on my own, and living at home is negatively impacting my mental and physical health. I'm considering targeting operations, analyst, or airport planning jobs to aim for a salary around $35,000. However, I'm worried about the risk of leaving a decent job only to face another layoff.
