Excited about a new job offer but anxious about the quick start date and notice period

I received a job offer this Wednesday that doubles my current salary, which is incredibly exciting! However, they want me to start as soon as Monday, which gives me virtually no time to notify my current employer. I got all the HR paperwork today, including the W9 and benefits information, but I haven't signed anything yet. I reached out to HR this afternoon to request a later start date, ideally about two weeks from now, but I'm worried this might cause some issues. I've been feeling pretty disrespected in my current role, and I've dealt with some bullying from staff, so I'm eager for a change. The new position promises a much more supportive environment aligned with my career goals. Luckily, I have other supervisors who can provide references, so I won't need to rely on my current manager. I know it's generally considered professional to give notice, and I do prefer to leave on good terms, but I'm feeling anxious about the whole situation. Logically, it seems silly to feel guilty about wanting to move on, especially for such a significant opportunity. I'm just trying to figure out if it's acceptable to push back on the immediate start date and how bad it would be to give less than two weeks' notice.
